Quick & Simple Bhel Puri

Happy to share this chat recipe with you!
Once you make this chat at home you will always prefer making it at home than buying it in a chat shop!
Bhel puri s a combination of various tastes, Sour, sweet & hot! Also it’s such a healthy snack! You can make green chutney in excess and store in refrigerator. When it’s time for snack you can boil potatoes and mean while scrape the veggies and mix all ingredients together to make a tasty tangy bhel... in just 10 minutes!

Ingredients

For making 2 plates of bhel puri,

Puffed rice – 3 cups
Potato – 2 boiled
Onion – 1 finely chopped
Tomato – 1 finely chopped
1 Carrot, 1 Cucumber & 2 slice of Raw mango – shredded
Coriander –  ½  cup finely chopped 
Oma podi/Plain Sev – ½ cup
Chilli powder - 1 tsp
Chat Masala - 2 tsp
Lemon - 1/2
Salt to taste

For making green chutney,

Pudina – ½ bunch or 1 cup
Dates – 3
Jaggery – 1 tbsp
Green chilli – 2
Tamarind - a small piece

Method

1. Put all the ingredients mentioned in “For making green chutney”  in a mixie along with water  and make a fine paste.

2. Heat a pan and pour the chutney to it. Let it get cooked till raw smell goes.Add the needed salt to it.Switch of the range your chutney is ready!

3. Now take the boiled potatoes in a bowl add little salt and chilli powder to it and mash. Mash gently, do not paste




4.If  you have masala puffed rice use it as such otherwise heat a pan and put 2 spoon of oil to it. When the oil is hot switch off  the flame and add turmeric chilli powder (Add some salt if its plain puffed rice) pour this oil in the puffed rice and mix well.
5. In a large bowl first pour the green chutney,then add the potatoes and all the veggies one by one and lastly the puffed rice,salt,chilli powder and chat masala

6. Mix gently. Sprinkle some lime juice and garnish with onion,om podi/Plain Sev and coriander leafs.


Suggestion:

If raw mango is not available you can skip it, adjust lemon accordingly.

Beetroot Halwa



A Healthy Sweet recipe just for you!

When it's a celebration...it's Kesari time!! everytime!! So why don't we change it...there are lot of healthy vegetable halwas...and here i have shared with you one such...
Beetroot is not loved by many of us. But this halwa will make you go crazy over it!!! I believe this to be an easy and tasty way to make kids have beetroot!

Ingredients

Beetroot – 1 cup diced
Milk – 1 cup
Sugar – ½ cup
Cashewnut – 15 – 20 nuts
Cardamon – 1 tsp
Ghee – 1 tbsp

Method

1.Chop the beetroot to medium size cubes. now steam the beetroot keeping it in your idli pan or boil it in water. Wait till it’s half cooked.

I prefer steaming because it is quick and healthy. If you are boiling it, you have to stain the beetroot to remove excess water. The nutrition’s may be lost in the water that you to stain.


2.Now transfer the half cooked beetroot to a mixie jar and coarsely grind it.This is an important step, because if you paste it it will become jammy !! just grind it in whiper mode to a coarse consistency


3.In a pan pour one cup boiled milk and add the ground beetroot to it.


4.Milk will boil and rise. When it rises stir it. In 15 minutes you will get the consistency as shown in picture. Milk will reduce to half.


5.Add half cup of sugar and Keep stirring it. You will get the halwa consistency as the sugar gets boiled. Add one spoon ghee and cardamom to it.


6.Now add two spoons of ghee to a small pan and roast cashew nuts till golden brown

7.Add this roasted nuts along with the excess ghee to your halwa. Give it a turn and transfer it to the serving bowl
