Ground nut chutney

Hi all! This is one of the simple and tasty chutney variety! 
The main ingredient here are peanuts which contain vitamins, minerals, nutrients and anti-oxidants thus are rich energy sources. So it would be perfect for breakfast. Also It lowers bad cholesterol and increases good cholesterol in the body, the amino acids present in them are good for proper growth and development of body. Do give a try and let me know your feedback. Ingredients:


Raw Groundnuts – ¼ cup

Coconut Shredded – ¼ cup

Red chilli - 2

Salt to taste

Method:

1.Dry roast groundnuts till you get nice aroma of the nuts, simultaneously the nuts will splutter, at this point switch off the flame



2.Let the nuts cool.

3.Now add all the ingredients to a mixie and grind to a fine paste

4.Transfer it to a bowl and then add water according to your required consistency

5.Heat a small pan, put a spoon of oil and when it’s hot add mustard and curry leafs, when it splutters add it to the chutney

6.Serve with Idli/Dosa

Okra/ Lady's Finger Rice

Hi all! Here's the tasty yummy Lady's Finger rice recipe just for you! Even those who don't find lady's finger interesting will change their thought after having this! This is an interesting dry rice recipe, the fried rice lovers should definitely try this! This rice dish is wholesome as it has rice, dal and vegetable! Ingredients:

Rice - 1 cup
Lady's Finger - 200 gm
Groundnut - 2 tbsp
Onion – 1
Curd - 1 tbsp
Salt to taste

To roast and grind,

Kadalai  Paruppu/ Channa Dal - 2 tbsp
Coriander Seeds - 1 tbsp
Pepper - 1/2 tbsp
Vendhayam/ Fenugreek - 1 tsp
Pattai / Cinnamon - 1 inch
Krambu/ Clove - 1
Red Chilli - 3
Coconut - 1/2 (Small size coconut)

Method:

1. Steam Cook or pressure cook the rice with salt and one spoon of oil

2. Dry roast the ingredients mentioned in "To roast and grind" and grind it dry without water


3. In a pan put a spoon of oil and when it's hot add chopped Lady's finger . Add 1 to 2 spoons of curd and fry the vegetable. The jelly  of lady's finger will come out and gradually reduce, also the veggie will be half cooked at this stage switch off  and keep it aside.


4. Chop onion thin and long.In a pan add oil and when it's hot add mustard, jeera, ground nuts, chopped onions and curry leaf.

5. When the onion becomes rose in color add the lady's finger and turmeric powder  to it, wait till the veggie get's cooked completely. (Close the lid and cook, Sprinkle little water if needed)

6. When lady's finger is cooked add the ground mix. In 2 minutes switch of the flame and close it with a lid. Let it rest for another 2 minutes

7.When the rice is medium hot add the lady's finger  to the rice and gently mix it together

Note:
1. Always use lid and prefer closed cooking, It saves time and energy
2. Do not mix it when the rice is very hot, there are chances that the rice will get mashed. The dish will get to Pongal consistency! That will spoil the taste of the dish.



Bread Omlette

Hi all! Most people have bread for their breakfast because it's quick and easy. And here is one such bread recipe which is very much filling and tasty to have in the morning/ as a evening snack. The green chutney used here can be prepared in excess and stored in the fridge for a week. Every time when you are using kindly heat it and use. Happy Cooking! Cheers!


Ingredients:

Bread - 2 slices
Eggs - 2
Onion - 1/4 portion
Capsicum - 1/4 portion
Pepper powder - 1/2 tsp
Turmeric  powder - 1/2 tsp
Jeera powder - 1/2 tsp
Salt as required
oil/Butter for toasting

For Green Chutney,

Pudina and Coriander equal quantity
Ginger - 1/2 inch
Green chilli - 1
Lime - 1 tbsp
Salt as required

Method:

1. Put all the ingredients mentioned in "For Green Chutney" in a mixie and grind to chutney consistency.


2. Beat the egg with pepper, jeera, turmeric powder and salt

3. Finely chop onion and capsicum and add to the egg mix ( This can be skipped, if you want a plain bread omelette)

4. Heat a tawa, apply oil to it and pour the beaten egg and gently spread it to needed size. Put a spoon of oil over the omlette so that the top layer also gets cooked. Wait for 2 mins and place the bread, let it cook for a minute

5.Apply butter/oil to the bread and gently turn it over. Let it cook for 2 more minutes 

6.Now turn it over and apply green chutney, fold and serve hot


Note:

1.The more oil you use to the upper layer the more quickly it gets cooked.
2.Before you place the bread make sure the upper layer is atleast half done.
3.You can change the number of breads and eggs according to your need.
4.Cook in medium flame to avoid burning of the dish.

Paneer Parota

Hi all! It's time for change! Let's give a break to the usual idli dosa breakfast. Try this paneer parota made from wheat and paneer. Both this ingredients  will give a very healthy start to your day!
Wheat has a natural ability to control weight in everyone. Three cups of wheat consumption per day is enough for an individual to live a long, healthy and disease-free life. Paneer is  rich in protein and calcium, it's a great source of conjugated linoleic acid — a fatty acid which helps lose weight by increasing the fat burning process in the body. So people who wish to lose weight, should definitely include a paneer dish in their diet plans.

Ingredients:

For stuffing,

Paneer – 1 cup
Onion - 1 small
Green chilli – 1
Coriander - 2 sprigs
Chilli powder – 1/2 tsp
Chat masala - 1/2 tsp
Salt

For chappathi,

Wheat flour - 2 cups
Water - 1 cup
oil - 1 or 2 tsp
Salt to taste

Method:

1. First make chapathi flour ready. Take 2 cups of wheat flour and make a dough with one cup of water,  2 tsp of oil and required salt. Make this ready before preparing the paneer stuffing.

 2. Finely chop onion, green chilli and coriander, it's very important because if they are big pieces then the stuffing will come out of the parota

 3. In a bowl or plate mix paneer, onion, green chilli, coriander, chat masala, chilli powder, salt. If Chat masala is not available you can use jeera powder.

4. Gently mix and make a big ball.

5. Take a small orange size ball of chappati flour and place it between your fingers and thumb and make  bowl shape.




6. Take a lemon size paneer ball and place it on the chappati flour and close it. if any excess flour is there remove it.


7. Flatten the ball with your fingers gently. Then you can spread it with a chapathi roll. you have to do it gently so that the stuffing dont come out.

8. Heat a dosa tawa and when it's hot put the panner parota and cook it in medium flame.

9. Apply oil or ghee on the parota while cooking.

10. Serve it with curd. You can add salt and chat masala to the curd or plain curd with salt will also be good






Lady's Finger Fry

Cooking is fun when it's quicker! Isn't it!? And one such dish is Lady's finger fry! Only task here is cutting the veggie, other steps are simple. And kids will love this fry. You can try it for snack or have it as a starter. And coming to the health benefits of Lady's finger, it's packed with dietary fibre that helps stabilisation of blood sugar levels by regulation of the rate of absorption of sugar from the digestive tract . Lady's finger is rich in vitamin C,  with a 100g serving meeting approximately 38% of your daily requirement of the nutrient. Ingredients:

Lady's finger  – 100 gm
Gram flour / Kadalai maavu - 1 tsp
Rice flour - 1tsp
Chilli powder – 1 tsp
Turmeric- 1/2 tsp
Lime - 1 tbsp
oil - 1 tsp
Salt to taste
Oil for deep frying

Method:

1. Wash the vegetable in water and dry it using a cloth or news paper. This prevents the jelly of Lady's finger from coming out. Now cut Lady's finger  to thin long strips.


2. Spread 1/2 to 1 tsp of corn flour and dust the Lady's finger.

3. Add gram flour, rice flour, chilli powder, salt oil and lime juice. Mix it. Add water according to need.(I used two spoons of water) The masala should just stick to the veggie that is the consistency. It's clear in the image below.


4. Heat oil for deep frying and fry the Lady's finger in medium to low flame. The strips are very thin so the veggie will get burnt if the flame is high. Carefully cook it to golden brown.

5.Lemony Lady's finger  fry is ready.





Badhusha

Hello all! This post is about an mouth watering sweet Badhusha! 

Mostly the one we get from shops are made from poor quality fat so after eating the sweet a layer sticks to our mouth! So it's better to make it at home! This is a simple recipe, the trick is making badhushas with layers, isn't it! If u make the dough to correct consistency then the layers will automatically come in place. So let's get to the recipe, Happy Cooking! Cheers!


Ingredients:

For making badhusha,

Maida - 1 cup
Baking soda - 1 pinch
Ghee - 1/4 cup
Oil - 2 or 3 tsp
Curd - 1 tbsp

For sugar syrup,

Sugar - 1/2 cup
Water - 1/4 cup
Cardamom powder - 1/2 tsp
Lime juice - 1/2 tsp

Method:

1. Take ghee, oil, curd in a bowl and mix it gently with a spoon for 5 mins.



2.Take the flour and baking soda in a plate and sieve it once or twice for equal mixing.


 3. For the sugar syrup, add the sugar and water and keep it aside.

4. Make a pit in the middle of the flour, pour the ghee oil curd mix. Gently mix it to get bread crumbs consistency. Now add little water ( I used 2 spoons of water) and bind all the crumbs together to make a soft dough. Close it and keep for 10 mins.



5. Now place the syrup on medium flame also heat the oil for deep frying of the badhusha in another burner.
6. Divide the maida flour to equal size balls and make a small depression in the middle.


7. Meanwhile check the sugar syrup for single string consistency. When single string consistency is reached switch off the flame and add cardamom powder and lime juice

8. Check the oil, If the oil is hot add the badhushas and switch off the flame, when the bubbles reduce switch on the flame and cook both sides.







9. Place it in sugar syrup till the next batch of badhushas are ready.


Note:

*If the syrup is cool or it's starting to crystallise heat it a little bit, syrup should look transparent and hot while the badhushas are dipped in it.
*Always keep the flame in medium to low, Since badhusha is thick all the layer will get cooked without burning only when the flame is in medium to low

Kambu/Millet Roti

Hey all! Today i have come up with this healthy and quick millet/kambu recipe.Hope you will enjoy making and eating this roti! This could be served for breakfast/snack.

Ingredients:

Kambu maavu/ Millet powder - 1 cup
Onion - 1
Green chilli - 1
Water
Salt to taste

Method:

1. In a bowl take a cup of kambu maavu add needed salt one finely chopped onion and very finely chopped green chilli
2. Add water and make a dough that is of chappathi dough consistency/ the one shown in picture
3. Heat a dosa tawa and take small balls of the dough and press it gently as in picture.
if you are not comfortable pressing it on a tawa then you can very well do it over a plastic cover.Spread some oil in the cover and spread the dough by gently pressing it and then transfer it to the hot tawa.
4.  Keep it in medium flame and cook it both sides by applying oil.
5. Serve hot plain or with chutney of your choice. Tomato chutney is what people in my home ask for!
